Mr. William Carter, left, is the Executive Chef and Director of Food and Beverage at the Playboy Mansion in Los Angeles, California. He has been creating extraordinary food and exclusive wine offerings for Hugh Hefner’s Playboy Mansion parties for over 26 years to 100,000 guests annually. Chef Carter’s philosophy is to bring out the best flavors in food products from beginning to end with minimal intervention and uncompromising standards. Kenny Rudolph comes to us with past experience as the executive Chef at the Sun Valley Lodge, Dolphin Bay Resort, and Sea Star in Washington. His New American Cuisine is not only cutting edge but he creates a healthy spin for every dish. Kenny is a James Beard Chef since 2003, exemplifying his sheer love and passion for food in a dynamic way at Desert Sage for guests to savor and enjoy.

General Manager and Director of Wine, Sam Fugate, right, shown here with owner Kevin Fortun, developed his restaurant career through many years of experience with top level restaurants. An avid skier and outdoorsman, Sam travels extensively to stay current with wine and food trends. Sam, along with executive chef, Kenny Rudolph, has formed a team that has been together more than 10 years. Sam's knowledge of returning clientele, attention to detail and ability to recommend pairings of Kenny's cuisine with a fabulous list of wines creates a memorable dining experience.
